The pot
The broth is the whole restaurant.
Pho is a patient soup: bones, spices, hours. It comes to the table deep and clear, over rice noodles, with rare steak or brisket laid on top and the herb plate set down beside it: Thai basil, bean sprouts, lime, a few rounds of jalapeño. The last five seconds of the recipe are yours.
